Recipe Busts

Well, I got inspired on Wednesday and I searched online for some tasty WW recipes. I found several that I printed out and selected three to try this week/weekend. I headed to the store to purchase necessary ingredients then headed home. Well, I have yet to make any of the desserts, but I have made two dinner entrees and I am not so pleased with them. I made a chicken teriyaki stir-fry on Wednesday night. It was okay, I liked the chicken, but I needed more soy/teriyaki sauce or some kinda spice because it was definitely bland. I made brown rice for the first time, and although Travis was not a fan, I liked it. It was just too much rice and not enough stir-fry, but it did fill me up fast! I was not able to eat all of mine because I was stuffed. Note to self: brown rice is a great filling food that is good for you....

Recipe#2 was a slow-cooker recipe I tried last night. I got up early on Thursday to cut potatoes and canadian bacon. It was a canadian bacon/potato chowder. I was excited, especially since the weather was getting cold- perfect chowder weather. I followed the recipe and when I got home, it didn't look any different after cooking for six hours! I added the evaporated milk and the half-and-half it called for, and it still didn't look to chowderish. Well, I poured myself a bowl and then hoped for the best. Well, I couldn't even finish it. There was too much pepper and not enough substance. I was sad that I didn't like it because it was easy to fix and I thought it would become a new favorite.

I still have one more from this batch to try tomorrow: baked cheeseburger macaroni. It sounds tasty and the picture looks good, so we shall see. Maybe the third time is the charm. If it doesn't work out, I don't know if Travis is gonna trust me when I bring home a new recipe to try. Alas, there is hope- Kristin sent me some WW favorites that her cousin shared with her. I will probably turn to that list next and I'll let you know about my dish tomorrow and others in the future. Please let me know if you have any suggestions of healthy dishes...

Here's to a four-day weekend!!
